Active fish
I have had small ponds in the past with a few koi, goldfish, etc. Never had a proper pond until now and when I see other people’s ponds the koi are very active, in the upper level of the water and very eager to feed as soon as the food goes in
Is this a case of keeping water in good check, lots of air and regular feeding times building confidence?
So far the koi in the new pond are definitely more active than I have had before but far from what I see elsewhere. Ammonia and PH are good and showing yellow and light blue and no trace of nitrates and nitrites as it is only a couple of weeks old.

It takes quite a while for koi to build up the confidence to come 'running' for the food.
If you take care of the water quality and make sure they will not be feeding vulnerable to predator attack when up at the surface, you just need patience.
I've got my fish used to me being there sat by the pond, and they now see me coming through the pond window and all rush over to see if I'm putting any food in. Despite that my koi are not really used to hearing people speak and are a lot less forwards if people are talking on the patio I am going to start talking to them every day next to get them used to that too. After a month of having the new pond up and running they are still reluctant to eat at all, let alone compete for the food. Food is going in and they don’t touch it (accept for greedy chagoi) for 10/15 mins and still not eating loads.
There are 12 fish which are between 40cm - 70cm and I have only been feeding one or two palm fulls of food. As it is a new pond I assumed they would be more reliant on food than in the old established pond which would have had tons of natural food available.
Water tests are all good and loads of air going in and fish are swimming around well.

what are the test result readings? and what sort of tests being carried out?

Ph, ammonia, nitrate and nitrite are the readings I can take and use a KK test kit.
Ph 8.2
Ammonia 0
Nitrite 20
Nitrate 0

Tested again today and the nitrate and nitrite have now gone off the charts high....looks like the new pond syndrome is kicking in.
Have done a 30% water change and added salt and will stop feeding for a few days. Is it worth adding another pond bomb to get the bacteria kicking in whilst the weather is still nice before it turns and everything slows down?

stop feeding until your tests come back good for a series of days, id personally not bother with the bomb, just water changes
